Turkey Meatloaf “Muffins”

2 lbs of ground turkey
2 eggs, whisked
2 tablespoons of wheat-free tamari
2 cloves fresh garlic, crushed
1 tsp each of salt and pepper
1/2 cup each of chopped onion, red pepper and green olives

Preheat oven to bake at 375. Lightly grease a muffin tin with coconut oil.
Combine all ingredients in a large mixing bowl and pour or pat into the pan.
Bake at 375 for 40 minutes or until cooked through.
 
Remove from oven and let rest for 10 minutes. Makes twelve mini meat loaves.
