Summer Fruit Salad

6 to 8 generous servings
A light, fat-free summer fruit salad that shows off August’s bounty at its best. It’s vegan and gluten-free, too!

Combine dressing ingredients, mix well and set aside:
Juice of one fresh-squeezed lemon
1/2 c. crisp white wine
1/2 honey

Combine in a large bowl:
2 large apples of your favorite variety, cored and chopped
2 large bananas, sliced
4 plums pitted and sliced
1 c. fresh strawberries, halved if the berries are large
1 c. fresh blueberries
3/4 c. seedless raisins
3/4 c. roasted, unsalted peanuts

Drizzle with dressing and mix well. Serve well-chilled.

This salad can be varied infinitely to taste or by using almost any fruit you have on hand. Try including nectarine slices, melon balls, huckleberries, slices of mango or kiwi. Use walnuts or pecans instead of peanuts. Use leftovers over plain or vanilla yogurt for a quick, nutritious breakfast or snack!
