Brown Rice With Carrots & Ginger

Serves 4 as a main dish
Ingredients:

  • 2 tablespoons olive oil
  • 3 cups shredded carrots, about 5 large carrots
  • 3 cups cooked brown rice (about 1 1/2 cups uncooked)
  • 2 tablespoons fresh, minced ginger
  • 3 cloves garlic, minced
  • 4 tablespoons tamari (soy sauce)
  • 2 tablespoons honey
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons sesame seeds, toasted
  • Unsweetened coconut flakes, toasted
